Basically once you have installed El Capitan, or Yosemite or even Sierra, you cannot go back to your old OS without erasing your hard drive. that being said, what you could do is get your iLife dvd's and put 'em in your dvd drive. The installers should show up and you can install them from there. I don't think El Capitan came with a whole bunch of apps, though. If trying to install the older versions doesn't work, you can get iMovie on the App store and I think GarageBand as well for $28 for the two of them,. iPhoto has been replaced with Photos and is built into the OS, so it's free, as far as I know. you used to be able to get something called Pacifist which would let you install just the things you wanted to from the Snow Leopard dvd (which I'm assuming you're using here)
